Royal wedding: Kate and William’s wedding cake

‘We reflected some of the architectural details in the room so the garlands on the walls were reproduced loosely on the fourth tier – we’ve used roses, acorns, ivy leaves, apple blossom and bridal rose.’

The bride wanted elements from the Joseph Lambeth technique of cake decoration, where intricate piping is used to make three dimensional scroll work, leaves, flowers and other adornments.

Sweet dreams: Vanilla Bake Shop

The inspiration for all our desserts at Vanilla began with my mom. She had a way of surprising our family with homemade cakes and sweets all the time. It was her thoughtfulness and my sweet tooth that inspired me to start baking many years ago.

Shortly after I graduated culinary school, my husband Jeremy and I partnered together, and started a dessert catering company. Over the years we have had the pleasure of catering and baking for some fantastic companies, charities, families, celebrities, weddings, kids, special events, and friends.

Having been immersed in art from a very young age, Alexandria Pellegrino received her Fine Art education from Ontario College of Art and Design where she majored in Drawing and Painting. It was here where she began experimenting with edible media like sugar, meringue and bread while exploring some of the themes in her thesis.

Sweet dreams: The Caketress

Lori had always been known for her artistic abilities and for baking sweet confections and providing them to friends and family from her kitchen.  It wasn’t until the Executive chef of a local hotel had enjoyed one of her cupcakes that her love for edible works of art began.

To perfect her technique, Lori took the initiative to learn as much as possible.  Initially self-taught through every lovely creation she made, her passion grew.  Driven to learn from the best, she was honoured to learn from Bonnie Gordon of Bonnie Gordon Cakes.
